This is another classic childhood Hungarian nostalgia dish for me. My Mama always made it the perfect level of sweetness. You could still tell it was a dessert, but it’s also a little more subdued than others. I have sensitive teeth so I’m not huge into sweet things so what I love about this recipe is you can play with the amount of sugar you add and the only thing it will affect is the level of sweetness. I usually put in about half a cup of sugar and while it does have a sweetness to it, it’s really quite light on the sugar. It’s totally up to you to change it however you please! Another thing I love about this dessert is it’s literally 4 ingredients that I’m sure most of you would already have on hand. So easy and accessible!!!! Eat this hot or cold, the world is your oyster. Enjoy!
Ingredients
1 ½ cups White Rice
2 cups Milk
4 Eggs
½ cup Sugar
Directions
Rinse your rice well and add it to a pot with your milk. Cook it until the rice is perfectly tender, stirring often. You need to watch this or the milk and rice will burn. I would say it will take about 5-10 minutes longer than the package instructions would say, but you should absolutely be tasting it along the way to make sure it’s cooked right.
Once cooked- let it cool completely.
Separate your egg yolks and your egg whites, but keep both.
Mix together your egg yolks and the sugar and add it to your fully cooled rice. Mix to combine. Just touching on the amount of sugar again- this is totally up to your preference. Some days I only add ¼ cup and some days I add ½ a cup, it only changes the level of sweetness and does not otherwise affect the recipe. Choose your own adventure!
Whip the egg whites until they form stiff peaks. Gently fold the whipped egg whites into your rice mixture.
Butter and flour a shallow baking dish. Add all of your rice mixture and bake for 30 minutes at 350℉. The edges should just start to brown. This recipe doesn’t rise and won’t overflow, so you can fill your dish right to the top if you wanted to.
Let it cool for 10-15 minutes. Cut into squares and enjoy as is, hot or cold. If you’re feeling fancy, put some jam on top!
