
This is another one of those recipes that I made for love when I asked Brad what his favourite cookie was. I’m still not a huge fan of white chocolate, but there is something about the way white chocolate and macadamia nuts taste together that just allows me to get over that entirely and devour an entire dozen cookies without a second thought. These are SO GOOD and I'm pretty confident that this recipe could convert anyone to a white chocolate (only in this recipe) lover.
Ingredients
140g Flour
¼ tsp. Baking Soda
½ tsp. Salt
115g Unsalted Butter
180g Brown Sugar
1 Egg
Macadamia Nuts
White Chocolate Chips
Note: If you are using salted macadamia nuts, omit the ½ tsp. of salt from the recipe.
Directions
Preheat your oven to 400℉.
In the bowl of a stand mixer, cream together your butter and brown sugar. After a few minutes, add your egg.
Once combined, slowly add your flour, baking soda and salt. Mix until just combined, then with a spatula, add your chocolate chips and macadamia nuts.
Line 2 baking sheets with parchment paper. Flour your hands and shape 2 tbsp. of dough into balls.
Bake for 7-8 minutes or until the edges are golden. Transfer to a wire rack to cool fully.
